History
The name Asafoetida originated from a combination of Persian and Latin words ‘aza’ and ‘fetida’ respectively. Aza means ‘resin’ whereas the latter means ‘smelly or stinky’. The meaning holds true for asafoetida because of its extremely pungent smell and bitter taste due to sulphur contents.
Description:
Gum Asafoetida is the specie of the giant Fennel plant belonging to the Parsely family. The plant is perennial, growing 12 feet high having fine leaves, fleshy taproot and bearing yellow flowers. The liquid that exudes from the plant turns into a dark/deep yellowish brown resin when dried. This property of the resin has led to it being termed as ‘Mistress of Spices’ and ‘Devil’s Dung’.
